One of our employees is quitting and I'm not sure what the best way is to handle their e-mail and user account.  I can add their e-mail to someone else's account so that someone else would get all of the old user's e-mails.  And I could grant "Full Mailbox Access" to someone so that person could veiw the old e-mails.  But is there a better way to either move all the e-mail to someone else's account or archive the e-mails so that we still have access to them in the future?  And at what point do you delete the entire user account?
 
How have you guys handled this in the past?

I usually disable all external access for that user and have all the e-mail be forwarded to someone else.  Now depending on what kind of user this was I may forward them to me and then forwarded "work related" e-mail to the responsible person myself.
 
Once I stop getting any e-mail for that person that is "work related" I would delete the account.

What's the easist way to forward the e-mail to someone else?  Do you add the old users e-mail as an addtional mailbox in the account settings in Outlook?  Or is there a way to do it at the server level?
 
How do you disable external access?  Is this in the user's properties under Exchange Features?  Or is there a better way?

Everything is done on the server....
Server Management....Users...
 Go to Properties for the particular user....
 Under Exchange Features you can disable web access and mobile access.....
Exchange General-->Delivery Options : You can forward all e-mail to particular account
You can also change the Dial-In settings or just remove the user from all groups under the Member Of tab...
 
If you need to get e-mail off the computer or files, just change the password so you can get access to the computer.
