I will be receiving a free copy of Server 2008 (Enterprise edition???) at the MS launch even in Pittsburgh on Monday.  I currently use SBS2003, but will eventually move to 2008.  Even though I do not need the advanced capabilities of Enterprise server, will I get all of the  functionality of SBS if I install and use the Enterprise edition, or would I be better off just waiting for SBS 2008?  In other words, am I just asking for trouble by using a more advanced version of Server if I do not need all of the features it offer?

No, look at your current SBS and you will see that is a suite.
