We have a network with 10 users in and a SBS 2003 Server
We have configured My Docs redirection on the server.
Is there anyway we can configure a single user NOT to have My docs redirection?

I exclude them in the group policy for the folder redirects...so it's denied being applied to that user.

How would I do that?

Create a standalone GPO to do the redirection at the appropriate OU in the domain tree (if you have not done so already). You can then security filter the GPO to Authenticated Users with a Deny on the user to be excluded (right click on GPO, Edit then select properties from the Action menu of the GPO editior). Alternatively, to avoid Deny permissions which can be difficult to troubleshoot, create a specific security group for "redirected users" and security filter the GPO using this. The disadvantage of the latter is that you have to either remember to add a new user to the "redirected users" group when you set them up or modify the standard SBS user templates.

I have created a security group called "Redirected Users" which contains all users that need to have the redirection but excludes the user who doesn't
I have then removed the "Authenticated Users" from the "Small Business Server Rediection Policy" and added the newly created "Redirected Users"
I have ran gpupdate /force.
I have logged the user off/on again and still I can't change the direction of his My Docs on his laptop.
Is there something I am missing?!

Is the redirection policy still being applied from another GPO? I'd suggest running RSOP.msc or gpresult on the laptop and find/check where the policy applying the redirection is coming from. Checking the policies by modelling on the SBS can also be worth while (this will fail if you have ISA: there are posts on this site that give a workaround)

I have logged onto the laptop and ran RSOP.msc.
Interestingly, the "My Docs" is still directing to the place we don't want it to!
The GPO section however is blank.
We are at a different location and can't connect to the location where the "My Docs" points to - could this be the reason why we can't change it?

I think I may have found issue!
We have two locations with a SBS in main office. Also at main office is a file server.
From remote office, we can pint the file server by IP but not by name.
How can we get around this?

Sounds like there may a bigger issue: maybe a new post will be worthwhile? There are lots of questions raised by the posts above e.g. How is the remote office setup: is there a local domain controller? Will take time for replication if this is the case. Is the DC resolving? Is the laptop authenticating against the domain or using a cached profile?
