I'm a brand new administrator of a SBS2003premium.. 
Very impressed so far - with the way everything works - professional and sleek..
What I find the hardest is to understand which - and how many - of all the features/programs I need - and how to know which belongs where.. OK - that's part of the learning process - which I like..

..and - since this is the SQL 'department' - I will ask this: What is a SQL server - and what do I use it for..?

SQL (Structured Query Language) server is a database server. On your server it holds all data for Monitoring and Sharepoint. If you have ISA 2004 installed it also holds all logging in a database.
 
There are two flavors of SQL. There is the full blown SQL server that is included in SBS 2003 Premium but not installed by default and there is MSDE (Microsoft Data Engine).
 
All data on this site (including your posts) are stored in a SQL instance that runs on my SBS 2003 which also hosts this site. You can do some amazing things with SBS 2003
