Just to be sure:

When I make sure that the SQL databases are in in simple recovery mode, I can use ntbackup to safely backup and restore the databases.

Is that correct?

NTBackup may not backup open files properly. This is why we have VSS in Windows Server 2003 platform. Since MDF and LDF files in SQL Server are being used by the SQL Server service, running NTBackup may backup the database files but these files may be corrupted in the process even when there is VSS because it is freezing the database files. I'd recommend that you treat your databases differently by running SQL Server backups instead of NTBackup
