Now I read somewhere that this was due to the way Exchange reports memory usage after SP1, did find an article on the KB, but it did not tell you what figure to actually set it too?

Suggestions on figure to set?

Exchange will use the available RAM dynamically and release it for other processes if needed. What problem exactly do you have (or think you have ;-) )? Depending on the amount of RAM in the server, you might set the registry change like it is posted here:

Hi Marina

As usual it's my server at home, it's not so much a problem, more to do with the SBS Monitoring (you know, the one you nag me about ) Since installing SP1 for Exchange the reports have been fairly regular. I did read that you can change the criteria that the reporting uses, but it did not suggest a figure to set it to? Or is it a case of, suck it and see?

Now I am confused. The Exchange store hasn't got anything to do with Monitoring. Did you apply the SBS hotfix 843539 after SP1 for Exchange, which will get rid of the store alerts?

After Exchange SP1 is installed, you might get SBS alerts regarding memory usage. 

SP1 changes the way a couple of performance counters work and this means that the monitoring in SBS reports excessive memory usage:
 
The store.exe process is allocating more memory than usual.Check to see if you are having problems with e-mail. If so, stop and then restart the Microsoft Exchange Information Store service.You can disable this alert or change its threshold by using the Change Alert Notifications task in the Server Management Monitoring and Reporting taskpad.

The answer is to change the monitoring thresholds. 
 
In the SBS console, select monitoring and reporting, change thresholds, Performance counters, Select Store.exe [second from bottom] and take note of the counter average.  Add say 10% to this value and set it as a threshold.  SBS will then only alert you if it goes above this new value.
